I remember playing a videogame. Possibly MMO? Fairly sure was at least co-op. I recall there was a segment where you come across a cemetery keeper in his cemetery shack, and he's talkin' about stuff, and you have to help him put down waves of zombies that are creeping up on the shack and keep him alive. I am reasonably certain that he either talked about his dead wife, or had named his gun a girl's name.
The fuck game was this? I cannot for the life of me recall.

Not sure. Definitely wasn't Ravenholm though, I enjoyed the game it was in.
Not impossible I'm thinking of VtM: Bloodlines, but I don't remember the specific quest there enough to be sure. I'm quite certain the NPC helped you kill zombies at least once, though. Maybe there was a sequence of quests?

It's in Hollywood, NPC named Romero. You're covering the exits for him so zombies don'tesc ape into the city while he goes out for tail.

It was a Fighting Fantasy book, Legend of the Shadow Warriors, and you had to help the old man keep his undead son out of his house.
