You'd have to be deaf to not notice that Undertale uses a lot of leitmotifs, but the dissertation linked was enlightening in just how much so it does. I missed at least half the examples in SAVE the World, at the very least.
Every time there's a new revelation I have or am shared with about the design of Undertale, I'm astounded anew. The bit about Snowdinn being strategically designed to encourage the Spare button in writing, music, pacing, and level and monster design blew me away. Thinking about it, even if the player is a heartless sonofabitch that accidentally found Genocide, Snowdinn has multiple appeals via Papyrus' shenanigans, right up to the literal end with the non-battle. Aside from the obvious warnings about having a bad time. Toby is far more subtle than I ever gave him credit for.
Guys, why do we have a AAA games industry that spends millions of dollars on titles when the best game of this decade was literally made by a introverted nerd in his parent's basement?
Toby is exceptionally talented, sure, but it still makes me wonder at least.

The very first paragraph of my LP compared it to Cave Story before I really knew how apt a comparison that was.

Because as great as it is, I was still done with Undertale in about 4 hours.

That's because the filler was optional, rewarding text instead of mandatory trinket gathering to pad.

There's definitely more than 4 hours of content in Undertale.

I tried to win at Thundersnail more often by removing the shell from my racing snail. I thought she'd go faster.

R^2 did a live play that was EXHAUSTIVE and most of the rest of us have played as much as we like, so you're probably fine, but wait a bit and see if anyone else would prefer spoiler tags.
