I made marshmallows! It was fun and delicious and not as hard as I feared! I was worried I did it wrong for a moment and I might try a different recipe in the future, but it all came out okay.
Except that the pre-marshmallow fluff destroyed my stand mixer. Just burnt out the motor, no more spinning whisks. I assume this is not a normal part of the marshmallow making process? And does anybody have a favorite stand mixer?

Closely entangled with the creation of marshmallows, I made the Perfect Cocoa last night. At least, what my mouth insists is the perfect cocoa. Richly chocolatey, barely sweetened, and topped with homemade marshmallows.
2 Tbsp non-alkalized cocoa powder (I used Mindo, I think it's local)
1 cup milk (I used local, it seriously tastes milk-ier)
1/2 Tbsp raw sugar
pinch salt
1/4 tsp vanilla
For some reason too much sugar at once makes me feel really ill, so I can't even handle pre-mixed cocoas anymore, but this was everything I ever wanted cocoa to be.

I got a flask of absolutely delightful ten year old balsamic vinegar and a bottle of fancy Portuguese olive oil for Christmas, and I think I've made more salads in the last month than in the entire previous year. My favorite so far has been iceberg lettuce, shredded carrots, red onion, feta cheese, capers, and a real basic vinaigrette with the oil/vinegar and a chopped shallot, served with slices of dry sausage on the side. It kinda doesn't look like much just typing it out, but man the vinegar takes the whole thing to a level I didn't know even existed. Heck, every once in a while I still get the urge to go in my pantry, pop the cork and just smell it for a bit.
The only downside is that this is one more ingredient I won't be able to bring myself to buy in cheap store-brand form anymore.

I was spoiled by working in Times Square for so long. I literally can't find a single non-Indian curry place anywhere else in my state.
Also Mothra according to google maps and guessing, your job is about 30 minutes away from a GO!GO! Curry and I highly recommend you go for it.
1) The curry is great
2) The stuff it's on is pretty good and plentiful
3) P. Sure I saw Hip Tanaka in their Times Square location once
4) The English website is adorable
All equally good reasons to go out of your way for it.

Most Japanese curry that I've tried around me has Not Been Great; luckily, there's an answer. I whipped up a batch at home from some Hot Vermont Curry bricks using Chris Kohler's recipe suggestions that throws in some milk chocolate and grated cheddar as you go, and it turned out pretty fucking phenomenal. We just had it purely meat+veg with rice, but next time I'm going to try to make some pork katsu to go with it.

Butter is a delicious condiment or just as a snack by itself.
I think this sets the tone for where this recipe is going.

I gots a foodin' question. So like ... five tastes, right? The five basic tastes. We got sugar as being basically just raw sweet. Salt is basically raw salty. MSG is pretty much raw umami or whatever you call it.
Are there things that are pure bitter or pure sour?

Acids like vinegar and citrus are typically sour. Foods rich in sulfurous compounds like the glucosinolates in broccoli and brussels sprouts are bitter.

Yeah there's lots of stuff that's got sour or bitter tastes to them, but I mean something that is entirely sour or entirely bitter with nothing else to it, the way salt is just salty and nothing else.

The strongest "bitter" substance is denatonium benzoate, which is the stuff they add to canned air to keep kids from huffing it. There is no one "bitter" flavor because there are 43 different genes that code for bitter-sensing receptors, with varying affinities to different substances.
Sour is just straight up acid, or proton concentration. I guess the closest to pure would just be hydrochloric acid.
